Franz Lieber is an Austrian born baker whose New Zealand born wife introduced him to the savory pie. Unimpressed, he set about experimenting with local ingredients, combining salmon and bacon or pork belly and apple with a crunchy crackle. These winning combinations and his expertise at creating a flaky pastry pie shell has made him a favourite with the locals and passing tourists.

Māori are known for being adept hunters and gathers but after colonization, traditional methods of harvesting food (mahinga kai) were actively legislated against.
